As the new year rolls around again, people are making their resolutions. By far the most popular always seems to be to “ get healthier”, “lose weight”, or “work-out more”. The common theme I’ve noticed is that people just want to be healthier! Which is awesome! The problem is, January 5th rolls around and people are already forsaking their resolutions because they're too hard to accomplish. That’s why I’ve compiled this list of 10 easy and delicious recipes to try this year that can help kickstart your health journey and keep you on track with your goals and resolutions!

What Do I Need?


The best part of these meals is that they're super easy to make. You can make most of them with simple ingredients around your house! As long as you have a pots and pans set, some cooking utensils, and some mixing bowls you’re good to go! Many of these meals can be made in one pot making them super easy to clean up!

Try this quick and easy black bean quinoa salad for a savory and spicy meal that you can make and prep multiple meals from. I love making this meal on a Sunday and then bringing it to work for lunch a few days a week!

This balsamic pork chop and roasted vegetable recipe is great for serving the whole family or to impress at your next party! It is so easy and can all be baked in one pot! This meal makes for easy clean-up and is a great savory winter meal to keep you warm in this cold weather.

Looking for something super light and healthy to try after all that holiday food? This kale salad is for you. It is so easy to make and is a great meal prep option!



4. Kale, Tomato, and Pancetta Pasta


This pasta dish is an amazingly simple dish to make that seems incredibly fancy, it’s sure to impress at the next family dinner! This meal is a great option if you don’t have a ton of time to cook and bonus: it’s super healthy and delicious!



5. Creamy Turmeric Cauliflower Soup


I adore this cauliflower soup recipe because it’s super creamy without a single drop of heavy cream being added to it! The cauliflower adds all the creaminess you need when you blend this soup up. Running low on time? You could definitely throw these ingredients in the crockpot in the morning to cook down and just blend when you get home before you serve!



6. Brussel Sprouts with Crispy Tempeh


This meal is so light and super healthy. I love making this meal when I’m in a rush but don’t want to eat junk. If you’re not into the alternative meat thing you could easily swap the tempeh with chicken for a similar effect. The brussel sprouts provide tons of health benefits with the added perk of low calories. You are definitely going to want to add this to your menu this week!



7. Roasted Fish, Rice with Cilantro Edamame Pesto


What I love about this recipe is you can really use any kind of fish you want. I prefer using cod or halibut because they’re not very “fishy” tasting and soak up the flavors of the pesto really well. You could certainly try this dish with salmon or other redfish as well if you’re looking for a different flavor!




8. Eggplant With Peas, Tomato, and Prosciutto

This recipe is full of flavorful veggies to help you reset and pack tons of vitamins into your diet! The eggplant provides a great meaty texture and absorbs so much flavor from the other veggies and the prosciutto.



9. Kale Caesar Quinoa and Chicken Salad


I don’t know about you, but I love a good Caesar salad. This recipe is easy to make at home and swaps your regular romaine for nutrient-dense kale! Making it even healthier than your regular Caesar salad. Adding in the grains and chicken make this a salad that will actually keep you full until your next meal!



10. Citrus-Balsamic Salmon with Grilled Bok-Choy Salad


This recipe is so flavorful and the salmon and bok-choy provide a nutrient-dense meal that you don’t have to feel guilty about! I absolutely adore this citrus-balsamic glaze that goes on this salmon. I always make extra to put on roasted veggies in other meals, it’s that good!
