Gluten- Free Almond Cookies

These cookies are my go to whenever I need a delicious gluten free treat! They are super easy to make and taste amazing. You can also add some chocolate chips to these to take them a step up. I personally love them with white chocolate chunks in them. Just be sure your chocolate is gluten free as well if you are giving these to someone who is gluten free! The best thing about this recipe is anyone can make them. They are so easy and only require a food processor to mix all of the ingredients into your dough!
What do you need to make these delicious cookies?
100 g of almond flour
4-7 pitted dates
30 g rice flour
1/3 tsp. baking soda
4 tbsp. almond milk
2 tbsp. coconut oil
1 tsp. lemon juice or apple cider vinegar
Optional- 1/4 cup chocolate chips or white chocolate chunks
Once you have all of your ingredients together, you can toss them all into the food processor. If you don't have one you could use your blender instead! Combine and blend ingredients until them come together to form a nice dough. After your dough is done, prep your pans! Put these cookies on their trays and bake them for about 15-20 minutes until slightly brown.
